Decades of experience has informed us that each knife we receive is unique in the condition that we receive it in.
We apply our knowledge and expertise to ensure the very best outcome possible for each knife sharpened specific to its design, style and intended use.
Our customer's want to know that the absolute best possible care and approach in sharpening has been given to their knives and that is why our 360° care plan forms part of our T&C's.
If a customer leaves a comment at Checkout we'll be happy to oblige if it is a service that we state that we can provide. If no comments are left at Checkout, sharpening & repair will follow the 360° care plan and procedures advertised on our website.
Kitchen knives are sharpened by hand on our precision aluminium oxide sharpening wheels that are water-cooled for optimum performance and temper retention.
This is the same process that the manufacturer who originally made your knife will have used.
Your knife will be returned with an edge that will be around 2 to 15 mm wide depending on blade taper and thickness behind the cutting edge and always with the correct angle for your knife and its intended application.
If your knife presents with a thicker than usual edge we’ll sharpen with slightly wider bevels to compensate for increased angles.
We also administer wider hollow ground bevels as standard for thicker bladed knives, cleavers and bushcraft, hunting knives . These wider bevels range in size from 10mm to 25mm depending on the taper and thickness of the knife. MORE HERE

We re profile bolsters which is essential for blade profile alignment – as standard and at no extra cost.
Please note however that we do not perform full taper re grinds.
We sharpen regular double bevel knives as well as single bevel blades.

Every knife is unique so we will adjust our sharpening to suit the knife.
Please read our T&C’s which cover every individual aspect of how we approach each sharpening.
We finish our service on polishing mop buffers up to 5000 grit which smooth the sharpening edge and create a brushed satin to semi mirrored finish on approximately 10-15mm of the blade from the cutting edge and finally we pass each knife on diamond steels to put them to bed.
Every knife is hand checked and will have to pass our Tomato cutting test before being allowed to be shipped back to you.

Every single order is recorded, photographed and archived to ensure quality compliance and is backed by our 360° CARE PLAN which is a collection of our core sharpening principles and standards.
You'll have 24 hrs from receipt of knives to test your knives yourself on a tomato to confirm sharpness.
This confirms our sharpness guarantee.
Once the 24 hr window closes unfortunately we cannot resolve any issues with regards to sharpness or condition of knives so it is imperative that you open and check your knives.
Your knife edge will be incredibly sharp whilst removing the absolute minimum of steel needed to create the perfect, clean and discreet edge.
The very nature of the sharpening proces performed in a sharpening and repair service reduces blade material.
It’s a reductive process.
On the opposite end of the spectrum, repairing damaged vehicles for example, is an additive process as dents are filled and resprayed.
Because removed blade material cannot be replaced, we work to exacting procedures regarding repairs which can be found on our ‘Knife Repair’ page and specific techniques regarding sharpening can be found on our ‘How it Works’ page.
Many re sharpening companies state knives will be returned ‘like new’.
This is not technically possible and an important fact to acknowledge.
Our service saves you money buying new, whilst returning beautifully repaired and restored knives with minimal blade material removed, re contoured, repaired, re serrated and polished .

We respect your knives and always perform our service to achieve best possible outcomes applying our century’s worth of knowledge and experience underpinned by our 360 care plan for each sharpen.
All sharpening and repairs are within an agreed and accepted -2mm tolerance of original contours and profiles if no damage repair is necessary.
If you have any special or specific requirements that fall outside of our T&C's or 360 care plan we’re also happy to oblige - but you must leave this comment at checkout when placing your order for us to do this for you.

To ensure this, our final quality and control stage is what we call our ‘Tomato test’.
Each knife will need to slice ( not push through ) a ripe beef tomato from tip to heel in one smooth motion with no resistance felt, absolute minimal pressure applied and a razor clean cut achieved before it is returned to you.

Why do we use the Tomato test?
We use the tomato test as the overwhelming majority of kitchen knives are used to cut food.
There are many gimmicks that re sharpening companies use to show sharpness. Shaving arm hair or cutting paper are some.
Kitchen knives need an edge that best suits the cutting material.
To create a sharpened edge that is fine and thin enough to cut hair or paper will result in chips and nicks when that edge comes into contact with harder substances such as bone, gristle, pips and nuts, stone surfaces or other cutlery in drawers or dishwashers.
Over a century of sharpening knives and cleavers has informed us
of the optimum angle and edge needed for each individual knife and the
application that it is intended for.
This aside, we are happy to sharpen any knife to cut paper or shave hair if a customer wants this.
